Cajun Microwaved Trout Recipe for Spotted Seatrout

Title: Cajun Microwaved Trout

Servings: 2-4
Difficulty: Easy
Prep Time: 10 minutes
Cook Time: 7-8 minutes
Ingredients: •Trout Fillets (qtys vary with catch!)
• Butter
• Lemon Juice
• Cajun Seasoning
• Breadcrumbs
• Green Pepper, Onion and Tomato - diced
• Parmesan Cheese
• Crumbled Bacon
Directions: Melt butter and lemon juice in a microwavable covered dish. Season fresh trout filets with Cajun seasoning to taste. Dip filets in melted butter/lemon and coat with breadcrumbs. Arrange in covered dish. Saute green pepper, onion and tomato in butter with Cajun seasoning until soft. Cover filets with vegetable mixture sprinkling top with a small amount of Parmesan cheese and bacon bits. Cover dish and microwave seven minutes rotating at four minute mark. Enjoy!
Other Notes: As noted this dish will serve as many people as you have fillets for! Just vary the ingredients as needed and to your taste. For instance the wife likes it with the Parmesan cheese but I don't. Some people like to add pine nuts! (see photo)Just experiment till you get it as you like it. Quick easy and best of all the microwave does the cooking!
